farina di castagne<br \/>\nPrendere 30 g di questo mix e aggiungere 40 ml di acqua con una punta di zucchero<br \/>\nPreparare questo mix la mattina e lasciarlo fino a sera a temperatura ambiente coperto da un panno umido, in modo che non si formi una crosticina in superficie<br \/>\nLa sera mischiarlo con il resto degli ingredienti, tranne la farina di castagne, il lievito e la lecitina che tenete in parte.<br \/>\nMischiare e lasciarlo a temperatura ambiente tutta la notte, avendo cura di coprirlo con della pellicola a contatto con l\u00b4impasto, per non farlo seccare.<br \/>\nAttenzione che la quantita\u00b4di acqua potrebbe variare a seconda del vostro mix di farina.<br \/>\nL\u00b4impasto deve risultare mediamente consistente, non fluido, ma neppure troppo denso.<\/p>\n<p>La mattina del giorno successivo, sciogliere la lecitina ed il lievito in due cucchiai di acqua tiepida ed aggiungerli all\u00b4impasto, avendo cura di mischiare bene. Il nostro impasto finale e\u00b4 pronto per lievitare l\u00b4ultima volta.<br \/>\nPosizionarlo all\u00b4interno del forno con luce accesa e scodella di acqua bollente.<br \/>\nAttendere quattro class=\"cooked-dir-content\">\n<p>A questo punto il nostro Pandolce e\u00b4 ben lievitato e pronto per essere cotto.<br \/>\nFate attenzione a maneggiare la forma contenente l\u00b4impasto: un colpo e potrebbe sgonfiarsi, compromettendo il risultato, quindi maneggiatela con estrema cura.<br \/>\nSpolverare la superficie con del cacao e decorare con le scaglie di mandorle.<\/p>\n<p>Accendere il forno a 170 Gradi statico e cuocere per 40 minuti ca.<br \/>\nNon dimenticate la prova stecchino.<br \/>\nAlla fine del tempo di cottura, socchiudere la porta del forno e lasciare il pane all\u00b4interno fino a che la temperatura non scenda e si possa maneggiare la forma.<br \/>\nTogliere il pane e metterlo a raffreddare su una griglia.<br \/>\nSe doveste notare che i bordi ed il fondo sono un po\u00b4umidi (dovuto alla condensa da raffreddamento) rimettete alcuni minuti il pane senza forma in forno ad asciugare.<br \/>\nAttendere completo raffreddamento prima di
